LangKalabasa Fritters

Something healthy for kids to munch on for a Saturday TV watching binge!

Kalabasa Fritters

Ingredients

  • 1/2 Kalabasa (squash) julienne
  • 1 cup sifted all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/3 cup milk
  • 1 teaspoon melted margarine
  • 1/4 cup chopped langka
  • 1/4 cup ground peanuuts
  • oil for frying
  • 1/3 cup sugar

Instructions:

Peel and slice kalabasa into small julienne. Sift flour, sugar, baking powder and salt. Combine eggs, milk and melted margarine. Pour over dry ingredients. Beat until smooth. Add langka and peanuts to batter and mix well.

Heat oil in a skillet. Measure 1/2 cup of squash and dip into the batter. Using a strainer, lift and transfer fritter into pan. Fry until golden brown. Drain then sprinkle with sugar.
