Corned Beef Potato Hash Recipe

Some days you just wanna have some breakfast all day long. Probably why concept restaurants that have an all day breakfast is all over Metro Manila. Breakfast is easy. Breakfast is happy. Breakfast makes all the wrong thing in the world right again.

Okay, I may be a being a bit overdramatic. I’m having one of those bad mommy days I shared on FB and it still has not subsided up to now.

But back to the topic, today, I’m sharing a recipe for corned beef potato hash. Ever since the Americans brought their first canned corned beef here, we have not let go and it became a favorite even for lunch or dinner. It became an adjunct to our famous Tapsilog, and became Corned Silog.

While this is not corned silog (Our corned silog have sauteed garlic and onions on top of the potatoes and corned beef) this corned beef hash is a cousin and uses potatoes instead of rice.

As I was saying, I was feeling down and also feeling a bit lazy so I used french fries instead of (real) fresh potatoes. This is a 5 step recipe, complete and no need for rice, very easy to do, and quick too! (Plus kids love them).

Corned Beef Potato Hash Recipe

Ingredients:

  • 300 gms (2 cans) big corned beef (choose your favorite. I like Swift Premium or DeliMondo Corned Beef)
  • 500 gms french fries
  • 3 cloves of garlic (minced)
  • 2 eggs
  • oil (to fry the french fries)

Instructions:

  1. Heat up the oil and fry the frozen fries. (be careful of oil splatter). Transfer to a kitchen paper towel to absorb the oil.
  2. On the same pan, remove everything except a tablespoon of oil.
  3.  Saute garlic in oil then follow with the corned beef. Brown a little before transferring to a plate. Set aside.
  4. Put back the fries, top with corned beef, then break the eggs on top the corned beef. Leave to cook in medium-low fire until egg is set and bottom is brown.
  5. Serve and enjoy the fruits of your lazy labor!

Notes:

French Fries should be at the bottom so it would not stick to the pan. Also, if you wanna do a DIY corned beef that you can do at home, try this how to make corned beef recipe! You get to have them cheaper and you can have unli corned beef!
